I hate messy food. No, I mean I REALLY hate messy food. I never give the kids sauce or suckers or jello (besides that it’s made of ground up hooves and bone) and I don’t do syrup! I always used powdered sugar when I made pancakes and fruit when I made french toast or waffles.

BUT…they got older, as kids do, and they didn’t appreciate me jipping them out of syrup. One day I decided that I would put chocolate chips in the pancakes and maybe that would appease them. Of course, I don’t have any regular chocolate chips, only white chocolate chips. Well, that will have to do. They turned out amazing! So amazing that the kids NEVER ask for syrup.

White chocolate chip pancakes are the perfect breakfast finger food…no sticky syrup mess! This is perfect for Sunday morning…ENJOY!

White Chocolate Chip Pancakes

2 cups “Pancake Mix”…like Bisquick

1 cup milk

2 eggs

2 Tbsp. Sugar

2 tsp. Baking Powder

1 1/2 tsp. Vanilla

1 cup of White Chocolate chips

Stir all ingredients, except the Chocolate chips, together in a bowl until blended. Scoop about 1/4 cup of the mix onto the hot greased pan. Sprinkle the top with 7-8 white chocolate chips. Cook until the edges are dry and then flip. Cook until they are a golden brown but don’t burn the chocolate chips!

Serve with some sliced banana and watch the kids enjoy! Have a wonderful weekend!!
