Quick and Easy Black Bean Soup

It’s Friday, this is the day that I look for something quick and easy to cook because I want to put the kids to bed and open a bottle of wine. However, I don’t feel right kicking off the weekend with a frozen pizza…yeah, I cook those. So, this week I would like to share with you a quick, family friendly dinner that will start your Friday night off right.
Black Bean Soup
2 cans of black beans
1-2 cups of salsa (Depending on how chunky you like it)
1 can of chicken broth
1/4 tsp Cayenne Pepper
Salt and Pepper to taste
In a large saucepan, lightly mash black beans with a fork. Add all of the other ingredients to the saucepan and bring to a boil. Reduce heat to a simmer and cook for 8-10 minutes or until heated through.
Serve topped with shredded cheese and sour cream. A few slices of avocado on top is also tasty! Consider making a few quesadillas and cutting them into triangles. There are great for dipping into the soup.
There you go! Quick, easy, inexpensive and I LOVE that it’s only one pan! I usually get four bowls out of this recipe.
