I am lucky to come from a modern matriarchal family with deep seeded southern roots. This means we don’t take your crap and our food is amazing! A few years back my aunt Jeronna put together a cookbook of many of our family recipes. Last year when I became a homeowner she very sweetly made me a copy of the cookbook to use in my own kitchen. I love looking through it because it brings back wonderful memories of my grandmother and the delicious food that she used to cook.

I was looking for a quick dessert to serve up this weekend so I headed to the kitchen and grabbed my family recipe book. I decided on my Aunt Ada’s Lemonade Pie! My Aunt Ada is from Birmingham Alabama. She is well into her 90′s and is still very active in gardening and cooking. She used to visit our house in the summer when I was a kid and it would literally take you a lifetime to absorb all of the information she has to offer. If she starts talking about something, you better grab a pen and paper! I loved spending time with her and reading her recipe brought a smile to my face.

So here it is, the perfect summer dessert! The best part…it’s easy as pie!

Aunt Ada’s Lemonade Pie

1 can of frozen lemonade

1 16oz tub of Cool Whip

1 can of sweetened condensed milk

2 graham cracker pie crust

In a large bowl combine the frozen lemonade and the sweetened condensed milk. Use a spoon or rubber spatula to gently mix. DO NOT use a mixer! Next fold in the cool whip. When everything is well blended, pour into the two pie shells. Chill for at least 3 hours but overnight is best.

 

This is what my first crust ended up looking like because of my OCD! It had a few crumbs in the center of the pie and so I held the crust and turned it upside down over the sink. Well, the entire crust popped out and crumbled…oops!

I just want to point out that if your cool whip is frozen (like mine obviously was) you can still use it. Your batter will look a little clumpy like this but just keep folding. Eventually it will melt enough to be incorporated in. It is more time consuming so defrosting your cool whip first is a better idea.

Here is the final product! This pie has an amazingly delicious lemon flavor and is wonderful topped with fresh strawberries. It’s the weekend! Don’t spend it slaving away in the kitchen. Whip up a couple of Aunt Ada’s Lemonade Pies and go enjoy your family!
