Cinnamon Roll Cookies

I have been on a serious cinnamon roll kick lately. But I can’t possibly eat one more cinnamon roll! So I found a roll cookie recipe and made some changes. These cookies turned out really yummy and surprisingly easy.
Cookie Mix
3/4 cups butter, softened
1/2 cup sugar
1 egg yolk
1 tsp. vanilla
1/2 tsp. salt
1 1/2 cups flour
Cream together the butter and sugar. When it’s mixed well, add the egg yolk (make sure you save the egg white for the cookie filling) and vanilla. Then add the salt and flour. Mix until everything is well blended. The dough will be a bit crumbly, like a sugar cookie dough. Shape the dough into a disc and wrap in plastic wrap. Put the dough in the freezer for about 15 minutes. Don’t leave it long enough to get hard. You only want it firm….Mind out of the gutter people! Back to the cookies!
Cookie Insides
1/4 cup sugar
1 1/4 tsp. ground cinnamon
Mix together and set aside. Next, add 1 Tbsp of water to your egg white and mix. Set aside.
Remove your cookie dough from the freezer and place it between two sheets of parchment paper. Roll it out to approximately a 9×12 rectangle. This part is kind of tough. Stick with it! Remove the top sheet of parchment paper and using a pastry brush, brush the egg white wash over the dough until it is completely covered. Begin sprinkling the cinnamon sugar over the dough covering the entire surface.
This is where you will want to start rolling the dough into a log. Be careful! The dough is sticky! I found it helpful to keep my fingers covered in flour as I rolled and I used the bottom piece of parchment paper to roll the dough. Once you have a log, be sure to pinch the ends so it doesn’t unroll. Wrap the log in plastic wrap and return to the freezer. Leave for 15 to 20 minutes. Remove from freezer and slice log into 1″ cookies.
Place on a cookie sheet lined with parchment paper. Bake at 350 degrees for 12-14 minutes or until the bottom starts to brown. The longer you cook them, the crispier they will be.
I added a sprinkle of cinnamon to some cinnamon roll icing I had lying around and covered half of the cookies with it once they had cooled a few minutes. The cookies were amazing with and without the icing!
This is a perfect cookie as the weather turns cooler and it is also perfect to make the dough ahead of time and bake when you need them! Enjoy!
