Eggnog Cupcakes With Cinnamon Whipped Cream Frosting

Christmas confession #57: I have never ever had eggnog…ever.

When I was thinking about making a holiday themed cupcake, I wanted something different and exciting. I heard someone mention eggnog and I knew that was it. I tweaked a couple of recipes and I finally came up with this one. It’s a soft, fluffy cupcake with lots of flavor. This cupcake will be the perfect addition to any holiday party.

Eggnog Cupcakes

  • 3/4 cup unsalted butter, softened
  • 2 cups sugar
  • 2 large eggs
  • 1 TBLSP pure vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 tsp. nutmeg
  • 1/2 tsp cinnamon
  • 2 1/2 cups flour
  • 1 1/4 cup eggnog
In a large bowl of stand mixer, cream together butter and sugar until it’s light and fluffy. Add in the eggs, vanilla, salt, baking powder, nutmeg and cinnamon with the mixer on the lowest setting. Add flour and eggnog alternately, starting and ending with flour. Turn mixer up to medium speed and mix until batter is smooth and satiny. Using an ice cream scoop, scoop the batter into prepared cupcake tins. Make sure you only fill the cups 1/2 full. Do not overfill! Put into a preheated oven at 375 degrees for 15 minutes. They should be a light golden brown.

Cinnamon Whipped Cream Frosting

  • 4 oz. cream cheese, softened
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups heavy whipping cream
  • 1 tsp ground cinnamon
While you are waiting for your cupcakes to cool, put the bowl to your mixer in the refrigerator until you are ready to make the frosting. This will help your frosting come together.
Add cream cheese and sugar to mixer and blend until fluffy. Then add vanilla and almond extract. Mixing on low, slowly begin to add the whipping cream and then the cinnamon. Turn mixer on medium-high and whip until stiff peaks form (about 7 minutes). It will be fairly obviously when it is done.
Pipe on the cinnamon whipped cream frosting and add a sprinkle of nutmeg for an extra kick. Make sure you refrigerate any leftovers…who are we kidding, there won’t be any leftovers!
